Seared Scallop Salad

Simple yet gourmet-worthy salad topped with beautifully seared scallops, with a tangy mustard dressing.

Ready in 30 mins (4-5 Servings)

Ingredient

Ingredients:
1box Seagift Scallop Meat (250g)
2 tsp Sesame oil
2 Garlic cloves, crushed
4 Bacon slices, chopped
300g Lettuce, leaves separated
55g Croutons
Fresh Parmesan cheese

Mustard Dressing
3 Tbsp Mayonnaise
1 Tbsp Olive oil
1 Tbsp Vinegar
2 tsp Dijon mustard

Procedures

Methods:
1. To make dressing, place mayonnaise, olive oil, vinegar and mustard in a bowl, mix to combine and set aside.
2. Heat sesame oil in a frying pan, add bacon to pan and cook, stirring it for 4 minutes or until crispy. Remove bacon from pan and drain on absorbent paper towel.
3. Add oil and heat it on high heat, add garlic and scallops and cook, stir, for 1 minute or until scallop turns opaque.
4. Place lettuce leaves in a large salad bowl, add dressing and toss to coat. Add bacon, croutons and shavings of Parmesan cheese and toss to combine. Spoon scallop mixture over salad and serve.
