Fried Rice Vermicelli with Clams

Ingredient
500gm Seagift Flower Clams (Lala)
200gm Rice vermicelli (soaked to soften and drained)
3 gloves Garlic (finely chopped)
2 gloves Shallot (finely chopped)
1 Spring onion( thinly sliced)
Seasoning:
2 Tbsp Vegetable oil
4 Chili padi, chopped
2 Tbsp Cooking wine
1 tbsp light soy sauce
Sesame oil (dash)
Pepper (dash)
Procedures
Methods:
1. Heat vegetable oil in a sauce pan over medium heat. Add in garlic, shallot and chili padi and saute till fragrant and lightly brown.
2. Add the clams and stir fry for 1-2 minutes
3. Add the cooking wine, soy sauce and dash of sesame oil.
4. Add rice vermicelli and mix well with the ingredients for 5 minutes until sauce is absorbed.
5. Taste and adjust seasoning with pepper. Garnish with spring onion
6. Serve while hot!
